Fondue Recipe – Hamburger Hamlet Onion Soup Fondue
3/4 cup sweet real butter
4 to 6 large onions, thinly sliced
2 quarts beef broth
1 teaspoon seasoned chicken stock base
White pepper, to taste
Round French or sourdough bread, sliced 1-inch thick
Jack cheese slices, 1 ounce each
Garlic toast
In a large kettle, melt butter, add onions and sauté until
transparent but not browned. Add beef broth and chicken base. Cover
and simmer 2-3 hours.
Remove from heat and allow to stand overnight.
The next day, remove and discard fat. Preheat and season to taste
with pepper.
Meanwhile, lightly toast bread slices and top with 5-6 slices of jack
cheese. Place soup in ovenproof individual serving dishes and top
with bread slices. Place soup under broiler just until cheese bubbles
and is soft but not browned. Serve with garlic toast on the side.
Makes 12 servings.
Crockpot Recipe – Crock Pot Hamburgers
1 large onion, sliced
1 celery rib, chopped
2 lb. lean ground beef
1-1/2 tsp. salt, divided
1/4 tsp. ground black pepper
2 cups tomato juice OR V-8 juice
4 garlic cloves, minced
1 TB ketchup
1 bay leaf
1 tsp. Italian seasoning
6 hamburger buns, split and toasted
Place onion and celery in a the crock pot/slow cooker.
Combine beef, 1 teaspoon salt and pepper; shape into six patties. Place over onion mixture.
Combine tomato juice, garlic, ketchup, bay leaf, Italian seasoning and remaining salt. Pour over the patties.
Cover and cook on LOW heat setting for 7 to 9 hours or until meat is tender. Discard bay leaf.
Separate patties with a spatula if necessary; serve on toasted buns.
Yield: 6 servings.
Stew Recipe – Cheapskate Stew
This is a hearty beef and macaroni stew made with ground beef and vegetables
you have on hand.
Prep Time: 15 Minutes
Cook Time: 45 Minutes
Ready In: 1 Hour
Yields: 6 servings
INGREDIENTS
1 1/2 pounds lean ground beef
1/2 onion, chopped
3 stalks celery, chopped
2 cups frozen mixed vegetables
2 cups water
3 carrots, chopped
2 cups cooked elbow macaroni
1 (15 ounce) can tomato sauce
1 1/2 teaspoons Italian seasoning
salt to taste
ground black pepper to taste
DIRECTIONS
Brown the hamburger meat with onion and celery. Drain (if it is fatty
hamburger meat).
Add water and carrots, then cook ’til carrots are beginning to get tender.
The carrots will be crunchy unless you cook them a fairly long time.
Add leftover vegetables, macaroni, tomato sauce, Italian spices, and salt
and pepper to taste, and simmer until the flavors blend and all ingredients
are warm through.
Green Bean and Beef Pasta Supper
Serves 5:
1 pound ground beef
3 cups hot water
1/2 cup milk
1 package Betty Crocker Hamburger Helper beef pasta
1 teaspoon instant minced onion
14 1/2 ounce can green beans, drained
4 ounce can mushroom pieces and stems
1/2 cup seasoned croutons.
Cook beef in 10-inch skillet over medium-high heat, stirring
occasionally, until brown; drain. Stir in hot water, milk, uncooked
Pasta sauce mix, onion, green beans and mushrooms. Heat to boiling,
stirring occasionally. Reduce heat; cover and simmer 9 to 10 minutes,
stirring occasionally until pasta is tender. Remove from heat and
uncover (sauce will thicken as it stands). Garnish with croutons.
