Zucchini


3 cups Missouri Mix
2 eggs, beaten
2/3 cup sugar
2 cups well-drained, grated, unpeeled zucchini
1/2 cup nuts
1/2 cup milk
1/2 teaspoon vanilla flavoring
3 tablespoons orange juice
1 teaspoon grated orange peel

Preheat oven to 325 degrees F. Grease one 9-by-5-inch loaf pan or two  7-by-3-inch loaf pans. In a medium bowl, combine all ingredients, stirring to blend. Turn into prepared pan(s). Bake 60 to 70 minutes until a wooden toothpick inserted in center comes out clean. Cool on a rack 5 minutes. Turn out of pan. Cool right-side up on rack. Makes 1 or 2 loaves.

Easy Zucchini

Four or five zucchini sliced into 1/4-inch rounds and dried with a paper towel.

Saute the rounds in some olive oil. As they are bubbling gently away, sprinkle liberally with garlic/pepper” seasoning, a fair amount of basil, and a little bit of tarragon flakes.
Use a soup spoon to flip it over and over while it both softens and crisps up. No salt necessary.

Delicious!!!!! I make this all of the time and serve it as a side with roast chicken, pork chops, lamb chops, and a big green salad, etc. It is an easy vegetable dish that I never get sick of it. It is also delicious the
next day cold out of the refrigerator!

Chicken and Zucchini With Garlic Cream Sauce

Chicken Recipes

1/4 cup butter
3 whole chicken breasts, halved
3 cups zucchini, sliced 1/8-inch thick
1/2 cup diced green onions
Garlic Cream
2 tablespoons butter
1 large clove garlic, minced
3 tablespoons flour
1 (3 oz) package of cream cheese
1 can chicken broth
1/2 tsp. pepper
PREPARATION:
Chicken:
In skillet, melt 1/4 cup butter; add chicken breasts. Cook, turning once, until chicken is browned and fork tender. Add zucchini and onions. Continue cooking, stirring until zucchini is crisp-tender.

Garlic Cream Sauce:
In 2 quart saucepan, melt 2 tablespoons butter; add garlic. Cook for 1 minute, then stir in flour and cook until smooth and bubbly. Add remaining ingredients and continue cooking, stirring occasionally, until sauce is smooth and thickened.
This is good served on a bed of rice – layer the zucchini and then the chicken breasts on top then pour sauce over each chicken breast.

Zucchini Pie

1 Can Crescent Rolls for Crust

4 C. sliced zucchini
1 C. chopped onion
1/2 c. butter     * saute’ these three 10 min 

2T. Parsley
1/2 tsp salt
1/2 tsp pepper
1/4 tsp basil
1/4 tsp oregano  * stir these in

2 eggs beaten
2 c. shredded mozzarella cheese

2 tsp dizon mustard

Make crust for pie out of the crescent rolls in a 8 inch pie pan.
Spread the mustard over the pie crust bottom.

Meanwhile saute the vegetables 10 min. While vegetables are sauteing,
mix eggs and cheese. Add all ingredience into pie crust and bake for
18-20 min until firm and bubbeling.

This is great even for dinner served with some warm rolls and a side
salad. Also great for small parties or showers.
