Pancake Day 2008 is officially February 5, 2008. Because that day is Super Tuesday in the United States, a day when a large portion of the primary elections will be held, The Free Pancake Day (”National Pancake Day”) held by The International House of Pancakes - IHOP (A US based restaurant chain) has been moved to February 12, 2008.

Not much has changed since then. If you have an interest you can read the results of that survey at the bottom of this post on Pancake Recipes.

1/2 cup mashed banana

1 egg

3 tablespoons milk

2 tablespoons vegetable oil

1/4 teaspoon vanilla extract

1/2 cup whole wheat flour

1/2 cup all-purpose flour

2 tablespoons sugar

1 tablespoon baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1. In large bowl, combine banana and egg; beat at medium speed 2 minutes or

until fluffy. Beat in milk, oil and vanilla. In large bowl, stir together

all remaining ingredients. Slowly add to banana mixture, beating at low

speed just until combined. Batter will be slightly lumpy. (For thinner

pancakes, add additional milk.)

2. Spray griddle or large skillet with nonstick cooking spray. Heat over

medium heat until hot. For each pancake, pour scant 1/4 cup batter onto hot

griddle. Cook 1 1/2 to 2 minutes or until puffed on edges and bubbles begin

to break on surface. Turn; cook an additional 1 to 2 minutes. Makes 8

pancakes.

PER PANCAKE: 125 calories, 4.5 g total fat (1 g saturated fat), 3 g protein,

19 g carbohydrate, 25 mg cholesterol, 265 mg sodium, 1.5 g fiber

Hawaiian Pancakes With Pineapple Syrup

Buttermilk pancakes studded with macadamia nuts and topped with homemade

pineapple syrup.

Boxed buttermilk pancake mix

Macadamia nuts

Syrup:

1/2 cup (1 stick) butter

1/2 cup sugar

1/4 cup pineapple juice concentrate (right out of the can)

I took the easy way by making buttermilk pancakes from a store-bought

mix.

Just add coarsely chopped macadamia nuts to the batter, as much as you’d

like.

For the syrup, in a small saucepan, place butter, sugar and pineapple

juice.

Heat over low heat, stirring, until butter melts. Do not boil.

PUMPKIN-CLOVE PANCAKES

2 cups all purpose flour
6 tablespoons (packed) brown sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cloves
1/2 teaspoon salt
1 2/3 cups buttermilk
3/4 cup canned solid pack pumpkin
3 large eggs
2 tablespoons (1/4 stick) butter, melted
4 tablespoons (about) butter
Pure maple syrup
Preheat oven to 250�F. Mix first 6 ingredients in large bowl to  blend.
Whisk buttermilk, pumpkin, eggs and melted butter in medium  bowl until
well blended. Add to dry ingredients and whisk until  smooth.  Melt 1
tablespoon butter in large nonstick skillet over medium heat.  Working
in batches, drop batter by 1/4 cupfuls into skillet. Cook  pancakes
until bubbles form on top and bottoms are golden brown,  about 2 1/2 minutes.
Turn pancakes over. Cook until bottoms are  golden brown, about 2 minutes.
Transfer to baking sheet; place in  oven to keep warm up to 20 minutes.
Repeat with remaining batter,  adding more butter to skillet as necessary
for each batch.  Serve pancakes hot with maple syrup.
Makes about 15.

Baked French Toast

4 eggs

1 cup milk

2 tsp. salt

6 slices day‑old bread

3 cup melted butter

Beat eggs; stir in milk and salt. Pour into flat, shallow dish.  Dip each slice of bread in mixture, turning to allow both sides to absorb liquid.  Place on greased (or buttered) cookie sheet and brush tops of slices with melted butter.  Bake in 500 ° oven for 8 minutes.  Turn slices and bake 5 more minutes or until golden brown.
