CABBAGE AND WHITE BEAN SOUP RECIPE

Cabbage for Cabbage Soup

1 cup dried white beans such as Great Northern, navy, or cannellini

(7 oz), picked over and rinsed

1 whole clove

1 medium onion, peeled and left whole

2 1/2 lb smoked ham hocks

3 qt water

6 fresh parsley sprigs

1 Turkish or 1/2 California bay leaf

1 fresh thyme sprig

2 garlic cloves, finely chopped

1 lb yellow-fleshed potatoes such as Yukon Gold (3 to 4 medium)

1 lb cabbage, cored and cut into 1/2-inch pieces (6 cups)

1/2 stick (1/4 cup) unsalted butter, softened

12 (1/2-inch-thick) slices from a baguette

Soak beans for soup:

Soak beans in cold water to cover by 2 inches at room temperature at least 8 hours, or quick-soak (see cooks’ note, below).

Initial preparation and cooking of cabbage and bean soup:

Drain in a colander. Stick clove into onion. Bring ham hocks and 3 quarts water to a boil in a wide 6- to 7-quart heavy pot, skimming off any froth, then reduce heat and simmer, covered, 1 hour. Add beans, onion, parsley, bay leaf, thyme, and garlic and simmer, uncovered, stirring occasionally, until beans are almost tender, 40 to 50 minutes.

When beans are almost done, peel potatoes and cut into 1-inch pieces. Add potatoes and cabbage to beans, then simmer, uncovered, until vegetables are very tender, 20 to 25 minutes.

Remove ham hocks. When ham hocks are cool enough to handle, discard skin and bones, then cut meat into bite-size pieces. Stir into soup with salt and pepper to taste. Discard bay leaf and onion.

Spread butter on both sides of bread, then toast in a 12-inch heavy skillet over moderate heat, turning over once, until golden, about 2 minutes total.

Serve soup with toast.

Beans can be soaked up to 12 hours, chilled.

To quick-soak beans: Cover beans with cold water by 2 inches in a 5- to 6-quart pot and bring to a boil, uncovered. Boil beans, uncovered, 2 minutes, then remove from heat and let stand, uncovered, 1 hour. to 6-quart pot and bring to a boil, uncovered. Boil beans, uncovered, 2 minutes, then remove from heat and let stand, uncovered, 1 hour. Soup improves in flavor if made 1 day ahead, cooled completely,  uncovered, then chilled, covered. Remove any solidified fat and reheat, thinning with water if necessary.uncovered, then chilled, covered. Beef Cabbage Soup (like Shoneys)

1 can (28 oz. whole tomatoes, drained

1 lb. ground beef

1 med. onion, chopped

3 cans (13 3/4 oz. each) beef broth

1 can (15 1/2 oz.) kidney beans

1/2 med. head cabbage, chopped

2 T. tomato paste, opt

salt and pepper to taste

Chop the tomatoes and reserve the juice.

Brown the beef with the onion. Drain the fat. Add the beef broth, beans,

tomatoes, and juice and tomato paste if desired.

Add the cabbage, and simmer till tender. Add salt and pepper.

The Cabbage Soup Recipe and The Cabbage Soup Diet

Recipes for CABBAGE SOUP

Cabbage soup can be eaten at any time you feel hungry during the day, and you can eat as much as you wish as often as you like.  This is one of the most well know fad diets.  It can result in weight loss that some health professional consider overly agressive.  Be sure to consult with your doctor if you are going to be dieting.  The impact on your health can be substantial and you should be monitored while on a diet to ensure that the dieting process does not negatively impact your health and well-being.

Ingredients:

6 Large Green Onions

2 Green Peppers

1-2 Cans Diced Tomatoes

1 Bunch Celery

1 Package Lipton Onion Soup Mix

1-2 Cubes of Buillion (if desired)

1 head cabbage

Seasoning: salt, pepper, curry powder, and other seasoning you like to your taste. if desired boulillon or hot sauce..

Cut vegetables into small pieces and cover with water. (V-8 juice and water can be used). Boil fast for 10 minutes. Reduce to simmer and continue cooking until vegetables are tender. Season to taste with salt, pepper,parsley, etc. EAT AS MUCH AS YOU WANT, WHENEVER YOU WANT, ANY TIME OF THE DAY.

Drinks: only unsweeten juices, tea, coffee, cranberry juice, water, nothing with sugar, no alchohol

Diet Plan:

Day One:

Fruit: Eat all of the fruit you want (EXCEPT BANANAS). Eat only your soup and the fruit for the first day. For drinks- unsweetened teas, cranberry juice and water.

Day Two:

Vegetables: Eat until you are stuffed will all fresh, raw or cooked vegetables of your choice. Try to eat leafy green vegetables and stay away from dry beans, peas and corn. Eat all the vegetables you want along with your soup.

At dinner, reward yourself with a big baked potato with butter. Do not eat fruit today.

Day Three:

Mix Days One and Two: Eat all the soup, fruits and vegetables you want. NO BAKED POTATO. IF YOU EATEN FOR 3 DAYS AS ABOVE, AND HAVE NOT CHEATED, YOU WILL FIND YOU HAVE LOST 5-7 LBS)

Day Four:

Bananas and Skim Milk: Eat as many as eight bananas and drink as many glasses of skim milk as you would like on this day, along with your soup. This day is supposed to lessen your desire for sweets.

Day Five:

Beef And Tomatoes: Ten to twenty ounces of beef and up to six fresh tomatoes. Drink at least 6 to 8 glasses of water this day to wash the uric acid from your body. Eat your soup at least once this day. You may eat broiled or baked chicken instead of beef (but absolutely no skin-on chicken). If you prefer, you can substitute broiled fish for the beef one one of the beef days (but not both).

Day Six:

Beef and Vegetables: Eat to your heart’s content of beef and vegetables this day. You can even have 2 or 3 steaks if you like, with leafy green vegetables.

NO BAKED POTATO. Eat your soup at least once.

Day Seven:

Brown rice, unsweetened fruit juices and vegetables: Again STUFF,STUFF,STUFF yourself. Be sure to eat your soup at least once this day. By the end of the 7th day, if you have not cheated , you will have lost 10-17lbs.. If you lost more than 15lbs, stay off the soup for 2 days before resuming the diet.from day one.

DO NOT DRINK ANY ALCOHOL FOR AT LEAST 24 HOURS AFTER STOPPING THE DIET..

DEFINITE NO NO ARE BREAD, ALCOHOL. CARBONATED DRINKS, INCLUDING THE DIET ONES AND FRIED FOODS….

It seems that a ton of people are looking for the cabbage soup diet, and I can’t help but think it must be that the Emmy Awards were today and the internet was being taken over by A-list, B-list, C-list and probably even D-list celebrities who were desperate to lose ten to twenty pounds to fit into their party clothes.

Scratch that. It was probably the C-list and D-list celebs… possibly the B-list, but definitely not the A-list. They’ve got personal trainers, personal chefs and whatnot to keep them from that “How many pounds before it fits, and in how many days” conundrum.

So I’ve decided to risk people thinking I’m turning into a food blogger, and post you what I know about The Cabbage Soup Diet. Personally, I’ve known people that have gone on it. I don’t believe in fad diets. They don’t work. I don’t “diet,” I think if a person does want to lose a few pounds, cutting out extras and excercising more is the way to go and the weight will stay off longer.  I know though, that as soon as I say anything negative, that people will pooh-pooh my two bits because frankly, I know they’re looking for it because they want to go on it and want quick weight loss, and so probably won’t listen to me anyway. I’ll provide information from WebMD then, and after that, if you want to do it then just do it and quit looking for someone to tell you it’s a good thing.
