1 tablespoon butter, for greasing the pan, plus 1 1/2 cups butter,

melted

3/4 pound left over BBQ pork or beef

1 1/2 cups white sugar

6 eggs

1/4 cup plus 2 tablespoons milk

1 1/2 (15-ounce) cans cream-style corn

1/4 cup drained canned chopped green chile peppers

1 1/2 cups shredded cheese (Recommended: combination Monterey Jack

and Cheddar)

1 1/2 cups all-purpose flour

1 1/2 cups yellow cornmeal

2 tablespoons baking powder

Pinch salt

Topping:

6 tablespoons butter

3 tablespoons your favorite bbq sauce

1 1/2 tablespoons cayenne pepper

1 1/2 tablespoons garlic powder

Preheat oven to 325 degrees F.

Lightly butter a deep 9 by 13-inch baking dish.

Shred left over BBQ into fine pieces and set aside.

In a large bowl, stir together the butter, milk, and sugar. Beat in

the eggs, 1 at a time, until well incorporated. Add the creamed

corn, chiles, cheese, and shredded BBQ and stir until well

incorporated.

In a separate bowl, stir together flour, cornmeal, baking powder,

and salt. Add flour mixture to corn mixture; stir until smooth. Pour

batter into prepared pan.

Bake in preheated oven for 1 hour 10 minutes, or until golden brown

and until a toothpick inserted into center of the pan comes out

clean.

Topping:

Combine all and melt in microwave. Brush over cornbread and place

back in oven for a few minutes. Cut into squares and serve warm.

It’s ok to break up pieces and serve in a small bowl.

Marinated Steak Italiano

1/2 cup Italian salad dressing can use fat free

2 to 2-1/2 lb. T-Bone, boneless sirloin or top loin steak

In shallow dish, pour dressing over steak. Cover and marinate in

refrigerator, turning occasionally, 3 hours or overnight. Remove

steak, reserving marinade. Grill or broil, turning and basting

frequently with reserved marinade, until done. Do not brush with

marinade during last 5 minutes of cooking.

2 tablespoons butter

1/3 cup chopped onion

1 cup tomato juice

1/2 cup water

1/4 cup catsup

2 tablespoons brown sugar

2 tablespoons vinegar

2 teaspoons Worcestershire Sauce

2 teaspoons prepared mustard

1 teaspoon salt

4 servings frying chicken

flour

salt

pepper

1/4 cup fat

6 ounces long spaghetti

Met butter in saucepan. Add onions and cook until very lightly browned. Add

tomato juice, water, catsup and seasonings. Simmer for 15 minutes. While

barbecue sauce is simmering, dredge chicken with seasoned flour and brown in heavy

skillet. While chicken is browning, cook spaghetti in boiling, salted water.

Drain and rinse spaghetti. Pour 1 cup barbecue sauce over spaghetti. Mix well.

Pour into greased baking dish. Arrange browned chicken pieces on top. Cover

with 1/2 cup sauce. Bake in 350 degree F. oven for 30 minutes. Pour remaining

sauce over chicken, return to oven. Bake until chicken is tender, about 40

minutes longer.

Barbecue Butter Beans

40 oz. can butter beans, drained
2 tsp. thyme
1 lg. can cream of tomato soup
1 tsp. minced onion
3/4 c. brown sugar
1/2 bottle Hunts all natural barbeque
sauce
2-3 lb. pork roast, thoroughly cooked
(usual salt & pepper), pulled part
in sm. pieces

Put in casserole, do not cover. Bake at 350 degrees for 1 hour, until done

If you do not want to use pork, you can use a chuck roast.
