French Toast – Baked French Toast
Serves 8 – 10
Ingredients:
1/2 cup butter 2 Tablespoons corn syrup
1 cup brown sugar 1 load unsliced French bread
5 eggs 1 1/2 cup milk
1 teaspoon vanilla 1/4 teaspoon salt
Directions:
In small saucepan, combine butter, corn syrup, and brown
sugar. Cook and stir over low heat until syrupy. Pour over
the bottom of a 9 x 13 baking dish.
Slice the bread into 1 inch slices. Place slices over the
syrup mixture.
Mix together eggs, milk, vanilla and salt until well
blended. Pour over the bread. Cover dish and refrigerate
overnight.
In the morning,remove from refrigerator and bring to room
temperature while oven preheats. Uncover and bake @ 350
degrees for 20 minutes. When you remove from oven, invert
onto large serving platter.
MUFFIN RECIPE - Almond Poppy Seed Muffins
1½ cups all-purpose flour
½ cup sugar
1 tablespoon poppy seeds
1 teaspoon baking powder
¼ teaspoon salt
1/3 cup light sour cream
1/3 cup applesauce
3 tablespoons oil
½ teaspoon almond extract
1 egg
1 egg white
Glaze
¼ cup powdered sugar
1/8 teaspoon almond extract
1 to 1½ teaspoons skim milk
Heat oven to 375° F. Spray bottoms only of 12 muffin cups with
nonstick cooking spray. Lightly spoon flour into measuring cup; level
off. In large bowl, combine flour, sugar, poppy seeds, baking powder
and salt; mix well.
In medium bowl, combine sour cream, applesauce, oil, ½ teaspoon almond
extract, egg and egg white; beat well. Add to flour mixture; stir just
until dry ingredients are moistened. Spoon batter evenly into sprayed
muffin cups.
Bake at 375° F. for 18 to 24 minutes or until tops are light golden
brown and toothpick inserted in center comes out clean. Immediately
remove from pan; cool 5 minutes on wire rack.
Meanwhile, in small bowl, combine all glaze ingredients, adding enough
milk for desired drizzling consistency. Drizzle over warm muffins.
Best served warm.
Yield: 12 muffins
RECIPE – GARLIC BREAD
Ingredients
1 pizza base
2 garlic cloves, peeled
85g/3oz butter
1 tsp fresh parsley, chopped
1 tsp cayenne pepper
Method
1. Preheat the oven to 250C/500F/Gas 9.
2. Place the pizza base on a baking tray and bake in the oven for 5 minutes.
3. Place the garlic in a food processor and blitz.
4. In a small bowl, combine the garlic and butter. Add the fresh parsley.
5. Remove the pizza base from the oven and spread with the garlic
butter. Sprinkle over the cayenne.
6. Return the pizza to the oven for a further minute to melt the butter.
7. Remove the garlic bread from the oven, cut into wedges and serve
BREAD RECIPE – Orange Chocolate Chip Bread
1/2 c Skim milk
1/2 c Plain nonfat yogurt
1/3 c Sugar
1/4 c Orange juice
1 Egg; slightly beaten
1 tb Orange peel; freshly grated
3 c All-purpose biscuit baking m
1/2 c Hershey’s mini chips semi-sw
Heat oven to 350 degrees F. Grease 9 x 5 x 3-inch loaf pan or spray with
vegetable cooking spray. In large bowl, stir together milk, yogurt, sugar,
orange juice, egg and orange peel; add baking mix. With spoon, beat until well
blended, about 1 min. Stir in small chocolate chips. Pour into prepared pan.
Bake 45 to 50 mins or until a wooden pick inserted in center comes out clean.
Cool 10 mins; remove from pan to wire rack. Cool completely before slicing.
Garnish as desired. Wrap leftover bread in foil or plastic wrap. Store at room
temperature or freeze for longer storage. Yield: 1 loaf (16 slices)
