BARBEQUE - BARBEQUE RIBS
Three to Four Slabs of Ribs
BBQ Sauce:
One bottle ketchup
Three quarter cup of canola oil
One half cup white vinegar
Four tablespoons brown sugar
One teaspoon Worcestershire sauce
One half to one teaspoon liquid smoke
Combine all ingredients in a large mixing bowl. Whisk until well
blended. Boil ribs for at least one and one half hours on medium heat
until it looks soft, but where it would tear apart when handling.
Rinse ribs and place ribs in sauce to coat well. Broil for a few
minutes to hear. Slice after broiling and serve.
RECIPE - BARBECUE SHRIMP
This Creole-Sicilian favorite from New Orleans is reborn with a low-fat
shortcut or two. The peels are left on the shrimp so they can add flavor to the
lush, buttery-peppery sauce. The bread means not a drop of sauce goes to waste.
1/2 cup fat-free Caesar dressing
1/3 cup worcestershire sauce
2 tablespoons butter
1 tablespoon dried oregano
1 tablespoon paprika
1 tablespoon dried rosemary
1 tablespoon dried thyme
1 1/2 teaspoons black pepper
1 teaspoon tobasco hot sauce
5 bay leaves leaves
3 garlic cloves, minced
2 pounds large shrimp
1/3 cup dry white wine
10 (1-ounce) slices French bread
10 lemon wedges
BARBEQUE RECIPE - BBQ BEEF ROAST
1 (4 lb.) beef roast
chili powder
Sauce:
1 envelope dry onion soup mix
1 1/2 c. water
1 c. catsup
1/3 c. Heinz 57 sauce
1/3 c. barbecue sauce
2 tsp. prepared mustard
2 tsp. Worcestershire sauce
1 tsp. lemon juice
Salt and pepper roast. Place in roasting pan and pierce
several times with tines of fork.
Sauce: Combine sauce ingredients; pour over roast.
Sprinkle chili powder over roast to taste. Cover and bake
roast at 350 degrees for 2 to 4 hours depending on size and tenderness
of roast; thicken sauce for gravy.
BEAN RECIPE - Bar-B-Q Bean Bake
1 lb. ground beef
1 lb. bacon, chopped
1 onion, chopped
1/2 c. ketchup
1/2 c. barbecue sauce
1 tsp. salt
4 tbsp. mustard
4 tbsp. molasses
1 tsp. chili powder
3/4 tsp. pepper
2 cans (16 oz. ea.) red kidney beans
2 cans (16 oz. ea.) pork and beans
2 cans (16 oz. ea.) butter beans
Brown hamburger, bacon, and onion. Drain fat. Combine and add all
ingredients, except beans, in an oven-safe dish. Stir well. Add beans and stir
thoroughly. Bake for 1 hour at 350 degrees.
