Apple Recipes

APPLE RECIPE - APPLE CHEDDAR CHICKEN

Serves 4

4 chicken breasts

4 TBS shredded sharp Cheddar cheese

1 tsp salt and pepper

2 TBS ground walnuts

2 TBS olive oil

1 Cup cinnamon applesauce

2 TBS diced green onion tops

1 large tart green apple, cored and diced

Red or green apple slices

Rinse chicken with cold water and pat

dry with paper towels.

Cut a slit in the side of each breast

to form a pocket.

Stuff each pocket with 1 tablespoon

cheese; press to close.

Combine salt, pepper and walnuts; coat

each breast with mixture.

Heat oil in heavy fry pan.

Cook chicken for 4 to 5 minutes per side

or until done.

Insert an instant-read thermometer into

the thickest part of the chicken.

Internal temperature should read 170 degrees F.

Remove to platter; cover and keep warm.

In small saucepan, combine applesauce and

green onions.

Cook over medium heat, stirring, until heated

thoroughly.

Stir in diced apple.

Spoon apple salsa over chicken.

Garnish with apple slices.

To serve as a sandwich, place cooked chicken

on a French roll and top with thinly sliced

red or green apples.

Sprinkle with apple pie spice; add top of roll.

Cookie Recipe - Apple Raisin Oatmeal Cookies

1 1/4 cups Equal® Spoonful*

1 cup unsweetened applesauce**

1/2 cup firmly packed brown sugar

6 tablespoons stick butter, softened

1 large egg

1/3 cup 2% milk

2 teaspoons vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1 1/2 cups quick or old-fashioned oats, uncooked

1 cup raisins

Combine Equal®, applesauce, brown sugar, butter, egg, milk and

vanilla. Mix with electric mixer until well blended. Stir in

combined flour, baking soda, cinnamon, nutmeg and salt. Gradually

mix in oats and raisins until well combined.

Drop by tablespoonfuls onto sprayed baking sheets. Bake in preheated

350° F oven 10 to 12 minutes or until light golden in color. Remove

from baking sheet and cool completely on wire rack.

Store in airtight containers at room temperature.

Makes about 4 dozen.

*May substitute 30 packets Equal sweetener

** Apple butter may be substituted for the unsweetened applesauce

Recipe - Apple Butter Recipes

42 ounces unsweetened applesauce

12 ounces apple juice, frozen concentrate, unsweetened

6 teaspoons cinnamon

1 teaspoon allspice

1/4 teaspoon ground cloves

Blend ingredients in blender until smooth (do it in two batches). Place in heavy, large pan and bring to a boil. Reduce heat to a simmer, cover with lid ajar and cook 1 hour and 20 minutes. Stir every once in a while. Cool and store in refrigerator. Will turn darker as it cooks.

Apple Recipes - Apple-Ginger Scones Recipe

2 cups Bisquick

1/2 cup apple; chopped, peeled

3 Tbs brown sugar

1/4 tsp ginger

1/3 cup milk

1 egg or 2 egg whites or 1/4 cup egg substitute

Milk

Sugar

Heat oven to 425F. Grease cookie sheet. Mix bisquick,

apple, brown sugar, ginger, milk and egg until dough

forms. Knead 10 times. Pat dough into 8 inch wide circle

on cookie sheet. Brush with milk. Sprinkle with sugar. Cut

into 8 wedges. Bake about 14 minutes or until golden

brown. Serve warm.
