Thai Drunken Noodles
8 ozs. dried flat rice-stick noodles
2 tablespoons soy sauce
1 tablespoon vegetarian oyster sauce, optional
1 teaspoon brown sugar
1 tablespoon canola oil
1 cup diced extra firm tofu
2 teaspoons minced garlic
Sliced Thai chili, to taste
1 1/2 cups sliced broccoli
1/2 cup thinly sliced red onion
1 cup bean sprouts
1 cup Thai basil leaves
Soak noodles for 15 minutes in water.
In a large pot of boiling water, cook rice noodles until just tender, about 1 minute; drain and set aside.
In a small bowl, combine soy sauce, oyster sauce and sugar, and set aside.
Heat oil in a large skillet or wok over medium-high heat. Add tofu and cook until golden, about 30 seconds. Remove and set aside.
Add garlic and cook 10 seconds. Add chile, broccoli and onion and stir-fry 30 seconds. Add sauce mixture, noodles, half of sprouts, basil and reserved tofu and stir-fry for 1 minute, or until hot.
Transfer to serving platter and sprinkle with remaining sprouts.

Garlic-Lime Chicken Drumettes with Chipotle Mayonnaise - 6g Carbs, 3g
Fiber
Drumettes, also called party wings, are the meatiest part of chicken
wings. They look like miniature drumsticks. They’re just the right
size to serve as appetizers for a party. The marinade gives these
drumettes lots of flavor in a relatively short amount of time.
CHICKEN AND MARINADE
6 garlic cloves, minced
2 tsp grated lime peel
2 tsp kosher (coarse) salt
2 tsp dried oregano
2 tsp cumin seeds, toasted, crushed*
1/2 cup lime juice
1/3 cup olive oil
24 chicken drumettes or party wings
MAYONNAISE
1 cup mayonnaise
1/2 cup light sour cream
1 Tbsp Dijon mustard
2 to 3 chipotle chiles in adobo sauce, drained, finely chopped**
1 Tbsp adobo sauce
GARNISH
2 avocados, sliced
1. Place garlic, grated lime peel, salt, oregano, crushed cumin seeds,
lime juice and oil in nonreactive shallow pan large enough to hold
chicken in one layer. Add chicken; turn to coat completely with
marinade. Cover and refrigerate at least 2 hours or up to 4 hours.
2. In small bowl, stir together all mayonnaise ingredients. Refrigerate
30 minutes.
3. Heat grill or broiler. Remove chicken from marinade; discard
marinade. Place chicken on gas grill over medium heat, on charcoal
grill 4 to 6 inches from medium coals or on preheated broiler pan
4 to 6 inches from broiler. Grill or broil 12 to 14 minutes or
until browned and juices run clear, turning once. Serve with
avocado slices.
TIPS
*Toast cumin seeds in dry skillet over medium-low heat, stirring
frequently, 1 minute or until slightly darkened in color and aroma
is toasty. Crush with mortar and pestle or flat side of chef’s knife.
**Chipotle chiles are dried, smoked jalapeno chiles. They come dried,
pickled or canned in adobo sauce. Look for them in the Latin section
of the supermarket.

Healthy Turkey Loaf

Lean ground turkey in a flavorful mixture of salsa, bell pepper, egg and
onion. The ease of meatloaf without the calories! Easily frozen and baked
later for a quick meal.
Prep Time: 15 Minutes
Cook Time: 25 Minutes
Ready In: 40 Minutes
Yields: 5 servings
INGREDIENTS
1/2 pound ground turkey
1 egg
1/4 cup salsa
1/8 cup chopped red bell pepper
1/8 cup chopped yellow bell pepper
1/4 cup chopped onion
1/4 cup dry bread crumbs
lemon pepper to taste
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl combine the turkey, egg, salsa, red bell pepper, yellow bell
pepper, onion, bread crumbs and lemon pepper. Mix well with hands until
blended. Press mixture into a loaf pan.
Bake in the preheated oven for 25 minutes.
Serve with Garden Vegetable Soup

Chicken Fajita Pizza Recipe
Ingredients:
1 tablespoon Oil
1 cup Bell Pepper — Cut In Strips
2 Boneless Skinless Chicken Breasts — Cut In Strips
1 package Pizza Crust Dough
1 Clove Garlic — Pressed
1/2 teaspoon Chili Powder
1/2 cup Picante Sauce
1/2 teaspoon Salt
8 ounces Monterey Jack Cheese — Shredded
1 cup Onion — Thinly Sliced
Directions for Chicken Fajita Pizza:
Heat oil in skillet over medium heat. When hot add chicken; stir-fry 5
minutes or until browned lightly. Press garlic and stir in with chili
powder, and salt. Add onions and bell pepper; stir-fry about 1 minute.
Heat oven to 425F degrees.
Spray pizza pan with nonstick spray. Unroll dough and place on pan.
Roll dough in 14 inch circle. Partially bake dough, about 8-10
minutes. Spoon chicken mixture over parbaked crust.
Spoon salsa over chicken; sprinkle with cheese. Bake 15-18 minutes or
until crust is golden brown.

Oregon Salmon Patties
Excellent recipe for canned or fresh salmon patties. This recipe is from the Oregon coast.
Prep Time: 10 Minutes, Cook Time: 15 Minutes, Ready In: 25 Minutes
1 (14.75 ounce) can salmon
2 tablespoons butter
1 medium onion, chopped
2/3 cup cracker crumbs
2 eggs, beaten
1/4 cup chopped fresh parsley
1 teaspoon dry mustard
3 tablespoons shortening
1. Drain the salmon, reserving 3/4 cup of the liquid. Flake the meat. Melt butter in a large skillet over medium- high heat. Add onion, and cook until tender.
2. In a medium bowl, combine the onions with the reserved salmon liquid, 1/3 of the cracker crumbs, eggs, parsley, mustard and salmon. Mix until well blended, then shape into six patties. Coat patties in remaining cracker crumbs.
3. Melt shortening in a large skillet over medium heat. Cook patties until browned, then carefully turn and brown on the other side.
Makes: 5 patties
