“Low-Fat Taco Soup”
 
1 lb. lean ground beef or ground turkey
2 cans pinto beans
2 cans hominy
2 cans whole kernel corn
2 cans tomatoes
1 can Ro-Tel (or diced tomatoes and green chiles)
1 pkg. taco seasoning
1 pkg. Hidden Valley ranch dressing mix
 
Brown meat in a large pot, seasoning to taste. Add remaining
ingredients, including juices from cans, and simmer for about 1/2 hour.
