1 pound ground beef or chicken

1 large onion, coarsely chopped

2 garlic cloves, minced

1 (15-ounce) can black beans, rinsed and drained

1 large bell pepper, coarsely chopped

1 (15-ounce) can tomato sauce

1 (8-ounce) package taco mix

1/2 teaspoon salt

1/2 teaspoon dried oregano leaves

12 (6-inch) corn tortillas

2 cups (16-ounce) Cheddar Cheese

Sour Cream, optional

Preheat the oven to 350-degrees. In a large skillet cook the meat with the

onion, and garlic until no longer pink. Remove from heat and drain excess

fat. Add the beans, bell pepper, tomato sauce, taco mix, salt, and oregano.

Simmer for 10 minutes. Spoon 1-cup of the meat sauce onto the bottom of a 13

x

9-inch pan. Layer 6 tortillas over the sauce. Top with the meat sauce.

Sprinkle with 1-cup cheese, and cover with the remaining tortillas and meat.

Cover with foil bake and 20 for minutes. Uncover, top with cheese and bake

for an additional 5 minutes. Let stand 5 minutes, top with sour cream.
