ZUCCHINI WHOLE WHEAT BREAD (a California recipe)

 

3 eggs, beaten

1 cup oil

2 cups brown sugar (light)

2 cups of frozen grated zucchini

2 teaspoons vanilla

 

Beat all ingredients together. Then, mix the following dry

ingredients:

 

3 cups whole wheat flour

1 teaspoon baking soda

1 teaspoon salt

¼ teaspoon baking powder

½ cup chopped nuts

 

Add the dry ingredients to the first mixture and blend well. Grease a

large loaf pan. Pour in the batter Bake at 325° for about 65 to 75 minutes.

Makes one large loaf.
