Salmon Recipes Salmon Patties

1 can (approx. 7 oz.) salmon
1 egg
1/4 c. condensed milk
1/2 c. Italian bread crumbs
1/4 cornmeal
1/2 tsp. salt
1/2 tsp. pepper
1 onion diced
olive oil, enough to cover bottom of skillet

Remove skin & bones from salmon; drain well. In mixing bowl,
combine with milk, egg, milk, bread crumbs, cornmeal, salt, pepper,
& onion. Make patties about 2″ in diameter; fry in oil until brown
on both sides about 5 min per side. Sprinkle salmon patties with salt. Wait
until it is brown on bottom before you turn over. Med. high heat. Watch
closely. They can be over cooked. So 5 min. maybe too long. It depends on
how
high you heat.
