Sweet Carrots – 6g Carbs, 1g Fiber

From The Mayo Clinic
Dietitian’s tip: Carrots — an excellent source of beta
carotene — keep well for up to two weeks if they’re
refrigerated, unwashed and in plastic bags. If you bought
them with their green tops still attached, trim off the
greens before storing or else they’ll deplete moisture
from the roots.
Healthy carb = whole fruits & vegetables, at least
50% whole grains and no more than 1 tsp of sugar per serving
Low fat = no more than 3 g of fat per serving
Serves: 4

1/2 cup water
1/4 tsp salt
2 cups shredded carrots
1 tsp trans-free margarine
Sugar substitute, to taste
1 tsp lemon juice
4 Tbsp fresh parsley, chopped

In a small saucepan, bring the water to a boil. Add the salt
and shredded carrots. Cover and cook until water is evaporated,
about 5 minutes. Remove carrots from the heat. Stir in the
margarine, sugar substitute, lemon juice and parsley.
Serve immediately.

Serving size: 1/2 cup

Slow Cooker Recipes

Slow Cooked Chicken Napoli

1 frying chicken, cut up
1 tsp seasoned salt
1/4 cup flour
1/2 tsp salt
1/8 tsp ground black pepper
2 tbs grated Parmesan cheese
1/2 tsp Paprika
1 lb zucchini, cut into thin slices
1/2 cup chicken broth
1 can (4oz) mushrooms, drained

Sprinkle slow cooker chicken with seasoned salt. Combine flour, salt, pepper, cheese, and paprika; coat chicken with mixture. Place zucchini in bottom of slow cooker. Pour broth over zucchini. Arrange coated chicken over all.

Cover and cook on low for 5 to 6 hours or until tender. Turn control to high. Add mushrooms, cover and cook on high another 10 to 15 minutes.

This slow cooker chicken recipe serves 4 to 6.

Buffalo Chips Cookies

1 cup Butter Flavor Crisco, melted
1 cup granulated sugar
1 cup firmly packed brown sugar
2 tablespoons milk
1 teaspoon vanilla
2 eggs
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1 cup oats, quick or old-fashioned, uncooked
1 cup corn flakes, crushed to about ½ cup
1 cup semi-sweet chocolate chips
½ cup chopped pecans
½ cup flaked coconut

Heat oven to 350 degrees. Grease baking sheet.

Combine Crisco, sugars, milk and vanilla in a large bowl. Beat at low speed of electric mixer until well blended. Add eggs. Beat at medium speed until well blended.

Combine flour, baking powder, baking soda and salt. Add gradually to creamed mixture at low speed. Stir in oats, corn flakes, chocolate chips, nuts and coconut with spoon.

Fill 1/8 cup measuring with dough. Level with knife. Drop 3 inches apart onto greased baking sheet.

Bake 9 to 12 minutes or until lightly browned around edges, but still slightly soft in center. Cool 3 minutes on baking sheet before removing to cooling rack with wide, thin pancake turner.

Makes 24 to 30 cookies
