Diabetic Vegetable Bake
frozen mixed vegetables, thawed 1 1/2 cups — flour 2 Tbsp — low-calorie
margarine 1 Tbsp — fat-free milk 1/4 cup — Parmesan cheese 1 Tbsp —
hot mashed potatoes (instant or leftover) 1 cup — paprika 1 dash —
Heat oven to 350 degrees F. Mix vegetable and flour in a small nonstick
casserole dish ( or spray glass dish with nonstick cooking spray).
Melt margarine in a small saucepan and add milk and cheese. Pour hot liquid
over vegetables. Top with mashed potatoes, spreading evenly. Sprinkle with
paprika.
Bake 25-30 minutes or until potatoes slightly brown.
