EASY BEEF STEW

1 lb pkg. Carrots
2 lbs beef stew meat
2 tsp. Salt
12 potatoes, peeled and cut in 1″ pieces
2 cans green beans, drained
2 cans peas, drained
2 cans corn
1/2 cup onions, minced
2 pkgs. Onion soup mix
Water, as desired
Place all ingredients, in order listed into slow cooker and cover with room temperature water.
Turn to high setting for 1 hour, then medium 4-5 hours or until carrots are tender.

Crockpot Chili with Beans and Corn

  • 1 can black eyed peas or cannellini beans, rinsed and drained (16 oz size)
  • 1 can kidney or navy beans, rinsed and drained (16 oz size)
  • 1 can whole tomatoes, drained and chopped (15 oz size)
  • 1 cup corn
  • 1 cup water
  • 1 medium onion, chopped
  • 1/2 cup chopped green onions
  • 1/2 cup tomato paste
  • 1/4 cup diced jalapeno peppers
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon mustard
  • 1/2 teaspoon dried oregano leaves

Directions:

Combine all ingredients in slow cooker. Cover and cook on low 8 to 10 hours or on high 4 to 5 hours. Garnish as desired. This recipe for Crockpot Chili with Beans and Corn serves/makes 6.

Crockpot Greek-Style Pork Stew

 

  • 1 1/2 pound boneless pork loin — cut into 1-inch cubes
  • 2 tablespoons all-purpose flour
  • 8 ounces baby carrots
  • 2 medium onions — cut into 6 thin wedges
  • 1 can (6-ounce size) tomato paste
  • 1/2 cup dry red wine
  • 3 tablespoons water
  • 2 tablespoons lemon juice
  • 1 teaspoon cumin
  • 1/2 teaspoon cinnamon
  • 2 teaspoons sugar
  • 1/3 cup chopped walnuts
  • 1/3 cup crumbled Feta cheese
  • Cooked noodles — if desired
Directions:
Combine pork and flour; toss to coat evenly with flour. Place in 3 1/2-quart slow cooker. Stir in carrots and onions. Combine tomato paste, wine, water, lemon juice, cumin and cinnamon; mix until well blended.

Stir into meat mixture. Cover and cook on low heat setting 6-7 hours or until pork is tender. Stir in sugar. Serve over cooked noodles. Sprinkle each serving with a small amount of nuts and cheese.

Crockpot Brunswick Soup

 

  • 8 ounces extra lean ground turkey or beef
  • 1/2 cup chopped onion
  • 1 cup diced cooked chicken breast
  • 1 can (15-ounce size) tomato sauce
  • 1 cup hot water
  • 1 can (16-ounce size) cream-style com
  • 1 tablespoon Worcestershire sauce
  • 1/8 teaspoon black pepper
  • 1 teaspoon dried parsley flakes
Directions:
In a large skillet sprayed with butter-flavored cooking spray, brown meat. Spray a slow cooker container with butter-flavored cooking spray.

In prepared container, combine browned meat, onion, and chicken. Add tomato sauce and water. Mix well to combine. Stir in corn, Worces­tershire sauce, black pepper, and parsley flakes. Cover and cook on LOW for 6 to 8 hours. Mix well before serving.
