Pumpkin Bread with Cream Cheese Filling
Filling:
1 package (8 ounce) cream cheese, at room temperature
1/2 cup granulated sugar
1 Tbsp. all-purpose flour
1 large egg
1 Tbsp. finely grated orange peel
Bread:
1 2/3 cups all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground cinnamon
1/2 tsp. ground cloves
1/4 tsp. ginger
1/4 tsp. nutmeg
1 cup pumpkin puree, canned or homemade
1/2 cup vegetable oil
2 large eggs
1 1/2 cups granulated sugar
1 cup chopped pecans or walnuts, optional
Preheat oven to 325. Lightly grease two 8×4x3-inch loaf pans. In a medium
mixing bowl, combine cream cheese, 1/2 cup sugar, 1 Tbsp. flour, 1 egg, and
the orange peel; beat until smooth and creamy. Set aside.
Into another bowl, sift 1 2/3 cup flour, baking soda, salt, cinnamon,
cloves, ginger, and nutmeg; set aside. Put pumpkin puree, vegetable oil, 2
eggs and 1 1/2 cup sugar in a large mixing bowl; beat well. Stir the
pumpkin
mixture into the flour mixture just until combined. Fold in the pecans or
walnuts, if using. Pour half of the pumpkin bread batter evenly into the
two prepared loaf pans. Spoon cream cheese mixture on top of pumpkin batter
layer and then pour on the remaining pumpkin batter. Bake in preheated 325
oven for 60 to 70 minutes, or until a toothpick inserted into center of the
loaf comes out clean. Cool bread in pans for 10 minutes; remove to a rack
to cool completely.
Pumpkin bread recipe makes 2 loaves.

Pumpkin Cake
1 can canned pumpkin puree (15 oz)
2 c white sugar
1 c vegetable oil
4 eggs
2 c flour
2 t baking soda
1 t ground cinnamon
1/2 t salt
1 pkg cream cheese (3 oz)
5 T butter, softened
1 t vanilla extract
1 3/4 c confectioners’ sugar
3 t milk
1 c chopped walnuts
In a mixing bowl, beat pumpkin, 2 cups white sugar, and oil. Add eggs,
and mix well. In another bowl, combine flour, baking soda, cinnamon and
salt. Add these dry ingredients to the pumpkin mixture, and beat until
well blended. Pour batter into a greased 15 x 10 inch baking pan. Bake
at 350 degrees F for 25 to 30 mins, or until cake tests done. Cool. In a
mixing bowl, beat the cream cheese, butter or margarine, and vanilla
until smooth. Gradually add 1 3/4 cups confectioners’ sugar, and mix
well. Add milk until frosting reaches desired spreading consistency.
Frost cake, and sprinkle with nuts.
Makes 20 servings.

Cold Vegetable Pizza
16 Cream cheese
1 Mayonnaise
1 Hidden Valley Ranch Dressing
Crescent rolls
1/2 Chopped celery
1/2 Chopped cauliflower
1/2 Black olives
Preheat oven to 350 degrees. Press out crescent rolls in a jelly roll pan and bake for 8 to 10 minutes.
Mix together the cream cheese, mayonnaise and Hidden Valley Ranch Dressing. Pour on top of cooled crescents. Spread the chopped vegetables over pan and top with shredded cheese.
Chill several hours or overnight.
Note: You may substitute any other fresh vegetable if you like.

Zucchini Pie
375 18-20 min
1 Can Crescent Rolls for Crust
4 C. sliced zucchini
1 C. chopped onion
1/2 c. butter * saute’ these three 10 min
2T. Parsley
1/2 tsp salt
1/2 tsp pepper
1/4 tsp basil
1/4 tsp oregano * stir these in
2 eggs beaten
2 c. shredded mozzarella cheese
2 tsp dizon mustard
Make crust for pie out of the crescent rolls in a 8 inch pie pan.
Spread the mustard over the pie crust bottom.
Meanwhile saute the vegetables 10 min. While vegetables are sauteing,
mix eggs and cheese. Add all ingredience into pie crust and bake for
18-20 min until firm and bubbeling.
This is great even for dinner served with some warm rolls and a side
salad. Also great for small parties or showers.

Chicken Recipes – CROCKPOT CHICKEN’N NOODLES
2 1/2 to 3 1/2 pound broiler/fryer chicken cut up
1 cup chicken broth
2 cups water
1 package (8 ounces) egg noodles
Salt and pepper to taste
Place chicken in crock-pot. Season with salt and pepper; add all liquid. Cover and cook on Low 8 to 10 hours (High 4 to 5 hours) Remove chicken from broth. Turn crockpot to high and add noodles. Bone chicken and cut up meat.
Stir chicken into noodles. Cover and cook 30 to 45 minutes, stirring occasionally.
